The team

Antonio Sáez is our chef de cuisine. With his characteristic passion, he combines Martín Berasategui’s signature classics with his own innovative dishes specially created for Lasarte. Although initially trained in law, his passion and talent for cooking led him instead to the kitchen of Martin Berasategui’s restaurant in Lasarte, Guipúzcoa. His career has been characterised by his depth of commitment, consistency and considerable hard work.

Joan Carles Ibañez and his front of house team are the kitchen’s ambassadors in the dining room, whose purpose is to create and maintain a harmony that permeates all areas, much like a silent orchestra in which every instrument plays its part in enhancing the dining experience. He has worked in the very best restaurants in Barcelona and is an expert sommelier.
